RECIPE: COTECHINO E BROVADA

Ingredients for 4 people
 400g of brovada
 1 cotechino
 1 onion
 2 bay leaf
 2 tablespoon olive oil
 Salt to taste

Difficulty: easy
Preparation: 15 minutes
Cooking: a couple of hours

Procedure:
1. Pierce the cotechino with a fork in different places. Put the cotechino in a large pot place with the chopped onion and the bay leaf. Cover with water and bring all to a boil. Reduce heat to low and let simmer for 1 hour.

2. Arrange a vegetal broth, put in a pot the chopped onion for sautè with oil. Add brovada, a bay leaf and salt to taste, blend all and sometimes add some broth. Cook for a couple of hours.

3. Serve hot with a friulano wine
