In English, rhythm depends on the alteration of stressed and unstressed syllable.
LAYOUT: The arrangement of words on the page in the texts you have just analysed created an "expectation" of poetry: on the whole, their lines were rather short, some of the texts used capital letters at the beginning of lines, some were divided into stanzas.
