PASTA ALLA PUTTANESCA

Ingredients for six people:

  • 500 g spaghetti or linguine
  • 300 g tomatoes
  • 150 g black olives
  • 50 g salted capers
  • 2 cloves of garlic
  • extra virgin olive oil
  • chilli
  • parsley
  • salt

Preparation

In a frying pan heat the oil and then add the garlic, capers rinsed with water before, and olives with no stones. Cook for a few minutes, then add the tomatoes, chilli and hashed parsley.  Cook for 10/15 minutes on low heat.  Put some salt in the sauce but don't add it too much because the capers are already salty. Fry quickly the pasta, cooked in the meantime, in the sauce and serve with hashed parsley.
