The “Galette de rois”



INGREDIENTS FOR THE “GALETTE DE ROIS”

Ingredients for the filling:

Ingredients for the puff pastry:

125 grams of ground almonds 

275 grams of “00” flour

100 grams of sugar

250 ml of water

100 grams of butter

250 grams of butter 

2 eggs

150 grams of “Manitoba” flour

1 spoon of flour

8 grams of salt

1 little glass of rum



 

1) FOR THE PUFF PASTRY

Mix 200 grams of "00" flour and all the "Mantioba" flour. Add the water with the salt and mix all for obtain a mixture without lumps, and let it rest for half an hour. Prepare the other mixture: mix the butter (cut in cubes) and 75 grams of "00" flour. Mix as long as the mixture becomes homogeneous. Stretch the dough and put on in the other mixture, and mix all. You have to mix and stretch the dough very well, because it have to become homogeneous.

 

2) FOR THE FILLING

Cut the butter in cubes and mix them with the sugar. Add the eggs, the rum and the ground almonds. Mix all the ingredients,  you should obtain an homogeneous mixture.

3) TO FINISH:

Than you have to cut two two discs of puff pastry with the same size. Put one disc in the cake pan and on that put the filling. Cover the filling with the other disc and brush the cake with a beaten egg. Cook the cake for 20 minutes at 200 grades.
