I think the high towers and pinnacles might symbolise a way to reach God: the height of these buildings go towards the sky the place where God is.

I don't know the precise function of stained glass but I could imagine it and I think was a way to 'fell' God: the light that illuminate the Cathedrals isn't white but colorful and goes through sacred images.
