This particular text is a poem. It is made by Ian Hamilton Finlay in 1964.

There aren't rhymes or  assonances but only the repetition of that word (acrobats) sets in different lines and directions.

Probably the message that the writer wants to transmit to the reader is that this disposition is like the acrobats. Indeed they are elastics and they can do some positions and figures so the writer wants to show it with the words.
